I suspect they were pre-made and refrigerated which to... me is a huge sin against Vietnamese food connoisseurs. note: Spring rolls should be at room temperature or slightly warm whenserved fresh. if the rice paper is hard and internal contents are cold then it's been sitting in the fridge.
