I can’t believe how good my vegetarian tacos were!! I got the queso soyrizo tacos and it was delicious!! The soy meat was a... bit salty and I was skeptical at first when the person who picked up the phone couldn’t answer my question of what it was madeout of, but it surprised me in the best way. Soy protein reminded me of beyond meat or impossible meat texture. The condimentsthat comes with the tacos were also super flavorful, I can’t stop thinking about the hot chili oil and pickled onions. Wow definitely going to be in the rotation!\n\nOrdered 3 cheese tacos via online and the process was painless. I arrived and was... promptly greeted and said my name and he handed me my food. The dining room was small maybe 4-6 tables and they’re ere mostlyfull. At a couple tables I could see people with some sandwiches that looked good.\n\nI brought my tacos home and they weregreat! Had some pickled onions, cilantro, limes, two salsas (the red one is HOT) and I can handle heat. Opted for two Birriatacos which are beef and an Al pastor. The pork taco had a good amount of pineapple in it and my wife liked that. I did not tryit bc I’m not huge on pineapple. I wish they offered a carnitas option but oh well. It’s not going to stop me from eatinghere often.\n\nI can only imagine dining in the tacos are even better. It was probably 20 minutes from when I picked it up towhen I ate for what it’s worth.\n\nParking is limited but it’s not a huge deal and I would definitely recommend you go checkthese guys out! I am from San Antonio and have Been to the Seattle area 3 or 4 times now and I had given up on finding good food, but let me... tell you…this food truck is amazing! The line was so long but it was worth the wait and all the employees were all so sweet(Even with all the chaos)! What was even more impressive is we got our food, went home (about 10 min drive) and didn’t touchour food for at least 45 min and when I opened opened the box my tacos were still hot! If I could give more stars I would! Thankyou el mariachi for the best tacos ever! ?? Will definitely be back!\n\nUpdate: went to their new restaurant (a year laterduring my visit to the Seattle area again) hoping it would be as great as the food truck location and let me tell you…it wasjust as amazing!
