This dish seems simple: steamed fish with silky tofu. Some scallions on top. Wouldn't blow anyone's mind. But when you add two... glorious, fermented ingredients into the mix, they change the whole game: black soybean and ?? (duo jiao) - Hunan salted choppedchilies. So savory. So spicy. So... So simply delicious. It makes me wish I spent more of my childhood seeking out Hunancuisine. I'm so grateful that that Happy Hot Hunan restaurant is just 10 blocks from my apartment. I love how there are so manyregional Chinese cuisines in NYC. I grew up eating mostly Cantonese food (think dim sum, Chinese BBQ, and most Chinese Americandishes). I encourage you to step out of your comfort zone and try something new next time you're craving Chinese food.
