Absolutely the best food that I've ever had. I've ordered the tasting menu twice and literally every course was so full of... flavour. The food is complex and balanced where each ingredient is so deliberate in how it plays with the rest of the dish. Iwas in awe after each plate! The service is top notch too. Wow! World-class gourmet food in Waterloo in an unfussy atmosphere! Benoit, the manager, bet us his tips that we'd find their... tasting menu to be the best we've had in Canada. We were skeptical as we've had more expensive tasting menus elsewhere. But hewas totally right, among the best meals we've had anywhere in the world! My boyfriend and I came to the Argentinian tasting night tonight. This was really exiting for me because as an Argentinian who... hasn?t been back home for a couple years I don?t get to enjoy authentic food from my country without making it myself or goingto my parents house. I came two week ago and had a fantastic time with Benoit as my server, who is also one of the managers atTrio. When I told him I was Argentinian and planning on coming to the Argentinian tasting night he made sure to put myreservation under his care and when I came again with my boyfriend he took care of us again! Not only he is a great server withan amazing and friendly personality but he is also very passionate and knowledgeable of his menu and about wines. He shared withme his thought process when crafting the Argentinian tasting night,explained all the dishes to me and how they paired with thewines and checked on us several times throughout the evening as he was curious to see how authentic his menu was. Now going tothe food, in short everything was amazing. Benoit and his team managed to make the meals I had everyday as a child tastesophisticated and elegant without losing the authenticity, comfort and flavours that I think about when I think aboutArgentinian food. Each wine pairing was above and beyond and enhanced the experience. Benoit also selected the wines to pair themenu himself and you could tell he carried a lot of humble pride about it when I expressed my satisfaction with the selections.Best evening I?ve had at a restaurant in my life by far, nothing was short of perfect.
