Our dinner was nothing short of outstanding. I've eaten in Chinatown in Philadelphia, New York, and San Francisco; this was the... best Chinese food we've ever had... and it's not even close. We ordered the smoked pork belly special, Sichuan cucumber, Mockeel, Dry fry green beans, mixed Chinese greens, and Mapo tofu. The greens came out first- tender bok choy and mustard greens ina highly aromatic ginger and garlic broth. The dry fry green beans were absolutely perfect, tender crisp but blistered on theoutside and well seasoned, topped with bits of crispy ground beef that added a wonderful savory note. The mock eel was a reallyinteresting house creation, made by spiral cutting shitakes into wide strips. They were seasoned with what seemed to be a soyreduction and slightly crispy with a pleasant chew. The Sichuan cucumber they brought out next was a mildly seasoned,refreshing palate cleanser. The mapo tofu was sublime- so rich and with the powerful ma-la punch that I love without beingoverwhelming. Finally, the pork belly was very good with mixed vegetables and whole Chiles. I also have to point out that whilethe majority of Chinese restaurants in America skew towards overly sweet and overuse of corn starch as a thickener- I guess toappeal to American tastes- A Single Pebble did not. Being on a keto diet, I was a little apprehensive, but I was thrilled thateverything we ordered seemed to be within keto limits (skipping the rice of course). Only the mock eel had a mild sweetness toit, and the sauces seemed to get their slight thickness naturally from the main ingredients, and all the dishes really showcasedthe flavors of the ingredients. This is my favorite restaurant in all of Burlington, especially for more authentic Chinese food. I have driven 1.5 hours to this... city after I moved out of the Burlington area, for the sole purpose of eating at this restaurant. The mock eel (made withshiitake mushrooms) is god-tier and I love their chef's tasting menu. It's really a delightful experience! Beautiful atmosphereand excellent service. We ordered the Buddha's Sesame Beef and it was delicious. Prices were pretty high ($30) so we shared the single order. Their... website states that all orders come with a quart of white rice, however when we received our order it was only a pint of whiterice and it was barely topped off. The flavor and texture of the Buddha's Sesame Beef was pretty good, I have made many seitanin my time and this was not the best nor the worst. This place had many options that we, as vegans, wanted to try. However,the extreme pricing really forced our hand to only try one dish. Read more

Friendly service and a wide variety of dishes. We especially liked the sweet salty flavor of the vegetarian mock eel.

Started with a Mai Tai and ate the chef tasting menu and was blown away. What a treat. Thank you to all the chefs in the back of... the house!! amazing ???? also, hats off to the bartender last night made my experience awesome even though I was by myself. Read more

Oh man this place. We'd skipped a single pebble earlier as we'd heard they're only for large groups then my husband made secret... plans for outside date night eating, so glad he did. The food was some of the BEST vegetarian Chinese dishes we've ever had. TheBuddha's sesame beef (seitan) and dry fried green beans were amazing. But the scallion bread, WOW. Basically a big, fluffy,steamed bun with dipping sauces. Really can't recommend enough especially if you're looking for plant based options. Everybodywas safe and friendly. The portions are very large though and they come out as they're cooked so in no particular order. Veryhappy. Coming back again and going to try the chef tasting menu. Read more

Single Pebble is a TRIUMPH. I'm a first gen Asian American who grew up with a lot of home cooking from my immigrant parents. I... was also spoiled with so much amazing Asian food living in Queens, NY. Missing the authentic tastes of home and the restaurantsof Flushing, I've had to resort to learning how to cook ethnic dishes after moving to Vermont. I absolutely love Vermont, don'tget me wrong! But there objectively isn't a ton of authentic Asian food. The best way I can put Single Pebble's tasting menu isinspired and brilliant. It was AMAZING and made both myself and my partner love foods we normally avoid (like asparagus andeggplant). They're able to get textures and flavors I didn't know were possible. For 9 courses PLUS dessert included, I feellike the value for the quality can't be beat! Read more
