There is something pleasingly barbaric about smoked meat. Perhaps it's that prehistoric genetic activation that comes with... tearing into a rib that's been basted and crisped over flames -- or maybe it's simply looking around a restaurant to realizethat you're not the only one foregoing utensils and licking your fingers. Bluebird Barbecue in Burlington satisfies both primalurges and disdain for decorum, while serving up delicious smoked meats in a modern and civilized atmosphere. We dropped in on aFriday night (sans reservations) and were greeted, welcomed, seated (within 20 minutes of our arrival), and attended to byfriendly and accommodating staff that included hosts, bartenders, waitstaff, and kitchen personnel. There wasn't a sour face inthe place, and while an automatic and shared 10% gratuity/service charge is not typical for stateside dining, maybe that hadsomething to do with the happy staff. There's a solid collection of beers and other libations, and we were allowed to samplebefore ordering -- which turned out to be a valuable experience in likes and dislikes! We enjoyed a pizza-tray size platter ofthree smoked meats and four sides. With a dozen sweet and moist cornbread muffins to begin, there was more than enough for thehealthiest of appetites. Our brisket was typical: fatty, but tender, and sadly, not outstanding vis-a-vis smoky flavors orunique spice combinations. Our pulled pork and ribs shared the meat spotlight and both fared better in the flavor department,with the ribs holding a nice glaze with plenty of pop. A variety of three house-made sauces added the extra flavor for eachmeat. Our sides were abundant and well prepared. The maple baked beans stole the sideshow, with smashed potatoes making a strongshowing. Personally, I would like a little mustard seed or more vinegar in the otherwise tame coleslaw. Best BBQ we had in a long time. We went to this eatery because we saw it on dives, diners and drive-ins. Bluebird did not... disappoint. Smoke chicken the best we ever had. Side were fab. Make sure you don’t miss the margaritas. Think twice abouthaving two. They are fabulous but strong. Read more

This place is wonderful. But what I really must applaud is the staff! Every person smiled and greeted my friend and I, the... food was served in a timely manner and delicious ???????? I was pleasantly surprised that there was a decent selection forvegetarian food. I would recommend visiting if you are in the Winooksi area, Bluebird does things right! Read more

Good but not great brisket was tender and dry needed way too much sauce to make it taste good. The Ribs were much better than... the brisket. Turkey was smoked but dry and needed sauce to make it palitable. Mac and cheese was good, beans very good,collard greens Needed the mustard and Apple cider vinegar to satisfy my tastes. DAMN GOOD BBQ, drinks, and people. The whole reason we ate here was I was taking pictures of a home (I am a real estate... photographer) in Burlington and I drove by. The smell of their bbq as I passed by caught my attention. If you can't smell thebbq before you get to a bbq joint it ain't worth stopping in. We tried the ribs and the brisket. The ribs were perfectlydelicious. BUT oh lordy was the brisket good - and thank god they did not trim off any of the fat. My only complaint was thecollards (which were delicious). I used to live in Georgia and they always cooked collards with country ham. By country ham, Iam talking the Southern kind that has it's own particular flavor. I wished a piece of ham would have been in the cup with therest of the collard liquor. Bluebird is so good I would eat there right now if they were open. Read more

Sadly no dine-in due to COVID restrictions. This is was my very first order and very first time trying their food. We got the... meal for two people and everything was delicious! Prices were reasonable and food was ready on time. Their brisket is great ???? Read more

Yummy! I liked the 1950s music: Buddy Holly, Hank Williams Jr., Danny and the Juniors, &c. For some reason the mashed potatoes... were the best part of our party's meal...? Unexpected. Mediocre collard greens. Can't win 'em all. *shrug* Pleasant staff; wewere thanked for visiting by like five separate employees on the way out. Read more

So it’s a near to post Covid experience here in Burlington VT. The indoor seating remains closed for the patrons safety but... the brand new outside enclosed patio is open. It’s a different kind of ordering experience… You’re given a menu andreminded what table you’re seated at. You then go up to the window and place your order at the touchscreen Kiosk. Drinks aregiven to you the window to the left and the food is brought out to you. All the staff are wearing masks and are extra attentiveto the guests. The menu is not the full old BBQ menu but the current pick up one. That doesn’t mean it’s sparse, more thatit’s lean and mean. I purchased the pulled pork sandwich sans B&B pickles and the Chopped Brisket Poutine. I asked for a bitof extra sauce for the pulled pork because it looked dry (I was wrong). The tangy mustard sauce was a perfect addition to meatand bun. The Poutine was fantastic (I wanted fries and more BBQ - the gravy and cheese were a nice bonus). I’m a sauce on hisBBQ kinda guy and even though I asked for extra, it really wasn’t needed. I’ll also mention I’m not the kind of person tograb the salt or pepper shaker before the first bite, but I’ve found that foods have been rather bland these days. This is notthe case here.
