We had an excellent dinner here while staying in Carlton. The price fixed dinner was three courses but could be four if you... share appetizers and dessert. At $45/person, it was a very good value for the quality of the food and service. This meal couldeasily have been $80-90/person in Portland. The wine list was not extensive, but had enough good local and European selectionsat very good prices by the bottle. Even if you are not staying in Carlton, it is well worth the drive to dine here! Everything was perfect. The chef is absolutely amazing. We were greeted by Chef Henry, he was charming and funny. You can tell... he has a passion for excellent service that does not feel forced or overwhelming. He was warm and inviting. The atmosphere istop tier. The paintings on the wall are so interesting. We started with the escargot. I have never had escargot before but thisdish was exquisitely prepared. The bread was delicious on its own, then we dipped it into the sauce that occupancies theescargot and it shoots the flavor to the moon. For the entree I had the Chilean sea bass, I ordered it because chef Henry isknown for his fish and I was not disappointed. Every thing on the plate worked perfectly together. Every single bite was exactlyright. My wife had the filet mignon and the chef was kind enough to ensure she knew it was pork. The dish was perfectlyprepared. We finished with the creme brulee and it was exquisite. Every aspect of the service, atmosphere and food was perfectin every way. I would suspect you would have to go to Seattle for the same experience. Fine dinning that is warm, inviting andnot stuffy is rare. At Cuvee we received food that should be classified as art, expertly crafted and thoughtfully prepared mealas well as 5 star service that is warm and inviting. Thank you Chef. Read more

Great spot, solid service, great wine list. The food was right on par with most 5 star french restaurants around, the lamb was... cooked to perfection, you could drink the clam broth and the soup was heaven. Even the creme brulee was great execution justdon't add the rosemary again...the flavor did not go. Still have an 5 out of 5, the Creme Carmel! Read more
