Amazing catering experience! We used Chaparral for our EFSC Cocoa Hispanic Heritage Celebration this year! They provided ropa... vieja, white rice, yellow rice, black beans, plantains, chips and salsa, enchiladas, churros and wonderful servers!!! Everyonewas raving about the food! ????The Spinach Enchilada Alone is worth the Trip???? I went for lunch with a group of friends. We all agreed the food tasted... amazing?as the packed parking lot on a weekday seemed to imply! Both interior and exterior convey a lively, welcomingtheme?from the beautifully blooming plants and wagon-wheeled benches outside, to the warm lamps and decorative saddles within.Plenty of photogenic decorations help make the experience memorable?and the food matches the vivid palette! The guacamoletasted like it?d been made to order?fresh, vegetal, and zesty, with a lime-cilantro-onion wave that whisked over the taste budswith every scoop. For me, however, the Spinach Enchilada won the prize for ultra-deliciousness. The description had me at?Monterey Jack, and cheddar cheese, topped with creamy chipotle mushroom sauce.? Every ingredient meshed beautifully, and at twoenchiladas per plate it was just the right serving size for one person (or to share). The rice and beans served on the sideprovided easily accessible dipping options, adding a bit of uniqueness to eat bite. We arrived and was able to get our orders placed just before the dinning room filled with people. The place became a packed... house! The food was really, really good. Service from Rebecca and Margarita was exceptional. Orders were perfectly cooked, andour drinks were never empty. The restaurant is really cool, authentic looking Mexican decor. There is plenty ofparking. Bathrooms were large, handicapped accessible and very clean. The portions sizes were huge, prices were very good forthe service, portions and quality we received.
