My new husband and I spent the last night of our honeymoon in Corpus Christi. We wanted to treat ourselves so we made one... “fancy” dinner reservation. The food here was simply fantastic. The sides seemed expensive, but our server told us they wereshareable portions and boy, they weren’t kidding. Everything was perfect and divine. Our server was attentive and we neverlacked for anything. They even gave us our first newlywed freebie: a shareable chocolate mousse. I wanted my mom to have a nice dinner while we visit Corpus but this place disappointed us. The shrimp plates tasted like... frost bite. My mom did not like at all. We did not eat the shrimp. Then the waiter forgot to bring me my wine. The only goodthing was the view! Read more

This place did not disappoint. I was looking to have a really classy dinner and this place delivered and then some. Service... was always top notch. Food was out of this world good. The lamb was cooked and seasoned perfectly. Pecan pie was to die for. Yes its expensive but the quality of the food and top notch service I felt like I was getting a deal. You guys really made mynight special and I will be back. My one and only negative was the chairs are starting to look at little sad. When it comes tothis sort of dining the chairs should be flawless. These pictures don't do justice. Classy atmosphere, professional staff, amazing food! I know people are saying it is very... expensive but for the quality and portions it is a far better deal than many of the other restaurants in the area where you willrack up a similar price if you're not careful with apps and drinks. Great restaraunt in a beautiful hotel. This had to have been my favorite meal I've had at Corpus Christi so far. The chef did... the scallops and steak to perfection, and quail legs we delicious. Our server was pleasant and made great recommendations. 5 outof 5! Read more

We had the best experience on our anniversary dinner date. The people running Republic of Texas Bar & Grill were very gracious... and pleasant and make our occasion unique! We had Ludwig as our waiter and his performance was of the utmost! We had Axisvenison tenderloins! Perfect! And we had Buffalo rib eye! Both were a delight! Can’t say enough good things about our experience here, but I’ll try to convey the point. We made reservations and requested... a window seating to view the bay, and upon arrival our table by the window with the bay view was ready. The hostess was sofriendly and polite. She introduced our waiter and looked over the menu which can be overwhelming as all the options arephenomenal. I would recommend looking over the menu online before sitting down so you’re not flabbergasted trying to decide.We ordered the quail leg appetizer to start. While waiting we were brought some fresh baked in house bread , warm and pillowlike interior, crusty, cheese coated and salty crust - this bread was fantastic. Waiter came back with our appetizer- the quaillegs are fried and coated in a “ sweet heat “ sauce - tasted fantastic, skin was crispy, meat was tender and the sauce was aperfect mix of sweet, savory with the slightest kick of heat. For our entrees, my wife ordered the sautéed jumbo shrimp -large fresh shrimp with fresh fettuccine pasta, a rich buttery Alfredo like sauce, crumbled feta, shallot and capers. Theyreally don’t skimp on the shrimp and the shrimp taste and texture was extremely fresh. She loved it. I opted for the cast-ironseared Buffalo ribeye - medium rare - comes topped with a roasted garlic / marrow rosemary crust. Wow, fantastic - steak wascooked to perfection , melt in your mouth texture , meaty and fatty ( it is a ribeye after all ) , and the garlic marrow cruston top put the flavor over the top. Please note that the entrees do not come included with sides and that is an additionalcharge. For a side we ordered a half share of broccollini - which is essentially baby broccoli with longer stalks and smallerflorets. From our entrance to the restaurant to the end of our meal, we had an incredible experience at Republic of Texas Bar & Grill.... The staff were attentive and friendly, the live entertainment was talented, the drinks were fresh and tasty, and the food wasdivine. We started at the bar with the Texas Wildflower and Gulf Shore Mojito. At the table, we had the diver scallops, whichwere cooked perfectly and served with delicious small bites and sauce, then ordered the venison with mac & cheese and the freshcatch of the day. The venison had a rich flavor and was so tender. The fresh bread went well with the sauce and the mac & cheesewas crispy on top, cheesy and slightly spicy throughout. The fresh catch was red snapper and was served on a bed of juliennedvegetables and lump crab. The snapper was literally the best fish I’ve ever had. The veggies, crab, light sauce, tender fish,and slightly crispy skin was the perfect bite. We were so happily full at the end of a perfect meal and wonderful night.
