We were at Chimayo and as much as my reviews are always positive, Chimayo deserves a-1 review on every level. The service was... non-existent, the drinks were short pours and worst of all, the manager (or perhaps she was the owner) was as rude as they come! Stay away. A total waste of money. *See owner’s response below. We did not sit at one of your pop out tables. We did notseat ourselves without speaking with a server. In fact, he even took a photo of us! Everything you said is untrue. And, morethan anything else, customer service should always be #1. Clearly, you do not ascribe to that philosophy and if you lookthrough your reviews, you will see several other reviews that mention your alcohol consumption on the job and your rude behaviorto others with service animals. Girls night out dinner date and it had excellent vegan selections. Staff was helpful in determining what I could eat. Mango... salad (without cheese) was delicious. They were very patient. Read more

We were fortunate to dine on the last day of a few summer specials the restaurant was running. I started with a wonderful... Palisade peach martini, which was fabulous and not sweet at all. We ordered a bowl of corn bisque to share, which was absolutelydivine. My dining partner enjoyed her vegetarian stuffed poblano chili and I enjoyed my seabass with Palisade peach salsa aswell. I rolled into town after a long day of traveling and I was looking for a nice place to eat when I came upon Chimayo’s. I sat... the bar and Bailey the Bar tender was happy to serve me. I was torn be their Salmon or their Medallions, but with Bailey’shelp, I chose the Medallions and I wasn’t disappointed. The atmosphere is very nice and the restaurant was bustling. We really enjoyed our experience here. Great service even though it was a busy night. We had the steak flat bread sandwich. The... steak was well seasoned and tender enough to bite through. The steak would have been great alone and paired well with the restof the sandwich. The potato wedges were also amazing. The desserts also looked amazing, but we were too full to order any. Was doing a family road trip to Vail. Stayed 1st night Durango. Great little town lots of friendly people. We let our... daughter find the dinner spot and it was spot on. Got a few seats at the bar ordered the homemade ciabatta bread with honeybutter. I had the fish tacos that the taste of the shrimp blew us away. My husband and daughter split the San Danielle pizza. It was cooked to perfection. Bar staff very friendly and she poured great cocktails. Finished off with a piece of fresh cobblerand ice cream. If ever back in town will be a definite return for us.
