Nimo's is a unique find in Colorado. Authentic Japanese sushi that is best appreciated for the simplicity and quality. Not a... place to go to if you want rolls or American style sushi. Had a dinner date here with my boyfriend; he liked the Japanese beer, I had a white wine. Next time we want to dive more into... the sake options! The steamed dumplings (Shumai) and the sushi were the best I have ever had in Colorado! Everything washandmade to order, and it was perfectly crafted. Rolls are smaller than you'd find at a more commercial sushi restaurant, so besure to order a variety of rolls! The staff were very nice and attentive, and the service was fast despite the quality. Wouldrecommend calling ahead to reserve a table on weekend nights. Looking forward to our next visit! Read more

Land locked States normally have a difficult time getting decently fresh ingredients. As someone who has lived in Hawaii for a... few years and using that as a measuring stick of this place has by far some of the best sushi in all of Fort Collins. Things toavoid is the octopus nigiri and any of the sake that's made in California. Salmon Egg (Ikura) is actually good here and have avariety of rolls. The miso soup is a must. The staff is on it. They understand the craft. And generally speaking they arepretty on top of making sure that you are taken care of without being completely overbearing. Sometimes as little as simple handgestures to see if you're okay. It adds to the quiet ambiance. On the flip side they also know how to have a good time andbringing over an entire bottle of sake is not uncommon for them. Some say it's a little on the pricey side but I think you'regetting what you're paying for here. This isn't some gas station where you're getting some generic rolls, this is a restaurantthat serves sushi. Read more

This used to be our favorite sushi restaurant in Fort Collins, so we kept giving it chances. Sadly, we've had 3 bad experiences... there, and will not return. The quality of the food has deteriorated, and we got terribly sick after our recent visit. Threeother friends shared that they also got sick after eating there on a different day. Our server was extremely rude and negligent.There are no gluten free options, apart from a few sushi rolls. We spent way too much to celebrate a special day, and my childand I left hungry. Read more

It's been a lot of years since I've visited Nimo's sushi. 20 years ago he told me that the most important part of sushi is the... rice. I can honestly say Nimo makes the best sushi rice in town. The fish quality is outstanding. The Yellowtail belly is adefinite winner - so is the Bonito, Toro, sweet shrimp, etc. I'll be back to get through the rest of the menu. Read more

The best nigiri I've have in recent memory; delicious! An excellent selection of large bottles of sake too.
