Amazing ramen. The Blank Tonkotsu had an incredible, smoky flavour. The broth was also full of flavour. The pork belly had just... the right amount of marbled fat, the meat was tender, and tasted incredible. The thick noodles were perfectly "al dente". Theother toppings were great (seasoned egg, woodear mushroom, scallions). The only thing I might have added was bean sprouts. But,honestly, the ramen was pretty much perfect. We also had the vegetable gyoza and zangi chicken as appetizers. Both wereEXCELLENT. The gyoza were perfectly fried with just a bit of crispiness on one side while the other sides were still soft andchewy. The chicken was crispy, tender, and so flavourful but NOT greasy. So good!
