soup needs to be tested for saltiness every 2 hours - if it's been sitting there on heat. needless to say, the soup was too... salty. one quail egg, and three three thin slices of pork. very little. you know you're getting ripped-off somewhere inthere... not going back again. overrated. it has to be done right, or not at all. This place is ridiculously good!! I don't know what they put in their food but it's MAGICAL! They're known for their rice... noodles and pork broth which are served separately, allowing the rice noodle texture to stay 10/10 delicious! Their noodles areUNLIMITED REFILLS, and their menu says they don't use MSG. After eating here, I believe them. I got the A1 (aka their original)and it was excellent! The broth had different layers of delicious flavors and when you bite into the tender-fall-off-the-bonepork, you get hit with a lovely taste of chinese rice wine. The best part? One hour after eating here I went to go hit the gym,and I don't know what they put in the food, but I hit new PRs and had a ridiculous amount of energy. The place is really nice but their food looks NOTHING like the pictures on their menu. Barely anything in the soup except few... pieces of bone and some cabbage. I also ordered peppercorn fried pork which was not crispy at all. Their entire food is SOsalty. And it?s so hard to eat the meat from the bone. Supposedly it?s ?renowned global franchise?.. HOT HOT HOT! This restaurant is famous for their stone pots that remain scorching hot for the entirety of your meal. Whatever... you order, stays hot to the last bite. The selection is limited but they have everything you need. The noodles are fresh andtoppings are varied and tasty. Prices are a bit high for what you get, but that's normal in this area. Very nice clean place. They don't let you put the items in the broth yourselves though due to people complaining about items... being undercooked. That was a little sad because I feel like the whole point of crossing bridge noodles is that you "cook"things in the still hot broth. The side dishes were very well done. Ordered the Signature rice noodle soup with braised bone-in pork. Extremely disappointed, to say the least. Part of the... disappointment came from the high expectations set by their website. Their product page featured image after image ofbeautifully laid out, aesthetic bowls of noodles. Upon receiving my order, I immediately noted how ugly it looked. But whocares? It's all about the taste. I expected a rich flavourful broth....or at least SOME flavour....but was extremelydisappointed at the blandness of the soup. The noodles were fine, though there were a few strands that had not fully cookedthrough. The pork was overcooked, chewy, and dry. The servers were extremely nice (the only reason this review is getting 2stars). I also questioned the cleanliness of the establishment....the utensils that were laid out for us had remnants of a pastmeal which I was not too pleased about...especially in the midst of a pandemic. Despite my resilient digestive tract, I camehome and threw up. Who's to say whether this was from the noodles....but seeing as how this was the only thing consumed tonight,I think it's safe to point fingers.
