If you’ve never done a tasting menu. This is a good place to start. They exceeded my expectations and introduced me to many... new flavors. The cocktails were some of the best I’ve had in Portland. The wait staff was knowledgeable and explainedeverything well, they’re clearly all food nerds, as well. Worth every penny and we left with a comfortably full belly. Notstuffed, not hungry. Everything here from the location, the service and the food is just delightful. When you get the wine pairing with your meal,... the sommelier will give you a historical back ground about wine in Mexico and they do a great job with picking which wine toaccent each course. The food is as beautiful as it is delicious. Complex flavors - rich, spicy, fresh and comforting. Next timeI will do the vegetarian and the meat centric courses all to myself! Read more

Truly a spectacular experience! Not only is the food so stunningly presented on the plate, the staff is beyond exceptional.... They're cheery, bright and informative of what you're eating. Hands down best restaurant in Portland. I've only been for the chef tasting, I've only been twice, and both times absolutely... blown away. Each item comes with a story and an education. I absolutely love it, a dream restaurant. I always get the mezcaltasting, my friend got the wine tasting. Service is impeccable, and absolutely deserving of 5 stars. Republica was certainly an experience and there were a lot of innovative things they were doing. For the most part the food was... very good, and the story telling for each dish was even better. At times however, I was fighting with myself wanting to likethe dishes more based on their descriptions, but deep down felt like many dishes were lacking some wow factor. The service wasfantastic, and it’s clear they’ve spent a lot of effort here, but to me it’s hard to rate a perfect 5 stars since Ididn’t walk away thinking “wow I need to come back to eat x y or z again”. I love innovative dinning experiences! We shared two different tasting menus! I got to taste twelve different dishes. The... flavors were wonderful. Every dish was beautiful, like art on a plate! My favorite dish had grilled strawberries, jicamaand chilies. The sweet and spicy combo was perfect! Our Morning Song cocktails were also delicious made with mezcal, tequilaand apersol. We also enjoyed a tasting flight of wines that were delicious. Several wines came from Mexico and were new tome! The service was perfect and I loved learning about each of the dishes we tried. The outdoor patio was beautiful and evenmore beautiful from the late afternoon sunlight streaming through the patio cover! Read more

We had a beautiful tasting menu with wine pairings on our recent visit. I really appreciated the service staff's knowledge of... the ingredients and their origins. The educational component really elevated the experience. I would also highly recommend thewine pairing, as the sommelier has clearly put a lot of effort into curating the selections, and they were a fantasticaccompaniment to the cuisine. Fantastic food...flavors cannot be beat. So much thought and preparation goes into these dishes and each time they are brought... out the server explains what ingredients are in them and where those are from. It's an amazing experience all around! I alsohighly recommend the mezcal tasting or getting Pablo to recommend one or two for you. He's a wealth of knowledge and a greatmixologist! One of the very best restaurants in Portland and deserves a James Beard Award if not a single Michelin star. Read more
