Awesome food. the brisket was so good i didn't even need the sauce. The sauce was good too. Baked beans were ???? ,and the... jalapeño rice was ????. Wedding food is typically fairly lack luster...I said it. We did not want that, so we hired Cindy Lou's! Chopped brisket, pulled... pork, mac n cheese, potato salad, and garlic toast. They offer sauce on the side so that guests can use as much or as little asthey want. The number of guests who complimented the food throughout the night and following days was the only validation weneeded that we made the right decision! It's was okay. After reading reviews I had to try. Had brisket and cheesy mash potatoes. Both were barely warm. Potatoes... nothing to write home about. The brisket was semi dry...and they must use liquid smoke....just a guess. It was like the awfulburger King flamed broiled taste that wouldn't go away. I was burping smokesignals for hours... Super nice and friendly guys manning the food truck when we got there. They were right in the midst of making the food for our... order, so we knew it was well-prepared and fresh. They were kind enough to tell us how their food truck got started, and theinspiration behind it, which is always fun and nice to hear because it makes the experience and food so much more personable.Regarding the food: it was tasty, and the portion size for each order was bigger than we expected (this is not a complaint). Thechicken, ribs, and pulled pork were quite tender and juicy. However, the brisket tasted a little overcooked, which resulted in aslight toughness to it, and the mesquite flavor in all the meats was overwhelming after a few bites. I'm certain some peoplelike a lot of that smoky flavor, but for my family and me, it was just a little too much. Their BBQ sauce actually tastes morelike a spicy salsa, which I personally wasn't fond of. The macaroni and cheese, mashed potatoes, and jalapeño rice were allquite delicious though. I was content with just those sides, and wish I had gotten another order or two of the rice. Overall,I'd only go back for their sides, which is a bit of a dampener considering it is a BBQ food truck. We ordered the pulled pork plate with coleslaw and garlic mashed potatoes, Mac daddy sandwiches with pulled pork and brisket,... and a smoked meat and cheddar sandwich with pulled pork. I should have taken pictures, but we ate it too fast! Everything wasawesome. The service was great and there was very little wait. We were lucky and got there before they were out of anything,which I've been told happens later in the day - we got the last of the mashed potatoes! Probably the best barbecue I've had inSalem. Great food, great prices. I love the pulled pork, brisket, mac and cheese and the cheesy potatoes. I wish they were a permanent... menu option, so I don?t have to check their Facebook to see if they will offer it before I decide to go. I got everything in thephotos for $30. The spicy bbq is really spicy. I?m not sure why other BBQ places seem to get more attention than Cindy Lou?s,because I think it?s the best in Salem. I have never been disappointed with their food!
