I came here for dinner to celebrate my Mom's birthday and we had an amazing time! Our server, James, was very knowledgeable... about the menu and all his recommendations were delicious! Their cocktails actually had alcohol in them and weren't too juiceheavy. The meats were seasoned and cooked to perfect. We were so hungry I didn't get pictures of everything we ate! Our first time here and my wife and I were quite pleased. The architecture and finishes inside the restaurant are beautiful and... the view that we had from our table was absolutely stunning. We started off with a calamari which was fresh and crispy with awonderfully tasty dipping sauce. I had the Lomo saltado (a steak and rice dish) for my entree and my wife had the scallops andpork belly. Both entrees were phenomenal portions were generous enough that we had plenty to take home with us. To round it out,we had a side of pork belly mac and cheese which was divine. Creative, artisanal fusion dishes served in a modern, upscale dining room with views of the golf course. Everything we had was... delicious, but the scallops & pork belly, calamari, and la bomba were phenomenal and definitely worth the hype!! The calamariwas crispy, spicy, and had a tart finish. Similarly, the richness of the scallops and pork belly were complemented by adelightful and bright citrus sauce. It was to die for! Whilst staying at the Princess had multiple choices of restaurants. Out of all of them this one stood head and shoulders above... the rest. Firstly the staff are extremely gracious, and affable. The ambiance is great, with local touches, comfortable layoutand options for bar, inside, or terrace dining. The terrace has great views of the surrounding area, and is perfect for diningwhile watching the sunset. None of this is as amazing as the food, and drinks. My husband and I dined here tonight after settling into the Princess today. We had an unbelievable experience. We dined outside... on the patio and Sergio was our waiter. Upon greeting us, he asked if we were celebrating anything and we let him know it wasour anniversary. He provided us complimentary champagne and dessert. We enjoyed two different sushi rolls as well as a shrimpappetizer as well.
