What an amazing meal. We came to celebrate my parents 49th wedding anniversary and the staff, food, drinks and ambiance were... outstanding. My sister coordinated with Max (one of the managers) and Matsuhisa Vail took care of everything. From a customizedprinted menu to a large circular table overlooking Vail mountain to accommodating our party of 10 (with two kids under 4) andfantastic waiter Nathan (and many others who helped bring/bus food and drinks) this was what a nice meal is meant to be. We hadso much good food. We stated with edamame and Shishito peppers. The peppers came with a delicious dipping sauce. The yellowtailjalapeno was sliced perfectly and dressed delicately with yuzu soy. The other all star was the bincho truffle with miso, chivesand yuzu dressing. Each piece has a generous amount of truffle on top for a satisfying bite (and we each got two pieces) Thecocktails are worth mentioning. My sisters enjoyed the gardener with gin, serrano pepper, cilantro, ginger and lime. Ipersonally loved the whiskey sour. I believe it has Japanese whiskey, something that made it pinkish in color and just a perfectblend. They have a huge list of sake, wine, champagne, etc. so you have plenty to choose from. We tried three of their saladsand the mushroom was the best followed the spinach and hearts of palm. The Colorado lamb chops were well cooked with a choice ofantichucho sauce (smoky and a bit spicy) or teriyaki (good but sweet). The Alaskan Black Cod Lettuce Cup was good but not afavorite. The Japanese eggplant was also good but the sauce used is very sweet. The nigiri and rolls were a nice way to end themeal with super fresh fish. This was my most expensive meal of the year and the best. To family, good food and Matsuhisa! Read more

Solid, fresh, and elegant dishes with attentive service. It is quite expensive but it goes with the vacation experience in Vail.... The black cod was delicious and the rolls were very fresh. I especially enjoyed the mushroom dish that was cooked in a verysavory sake broth. Read more

Had a great experience at Matsuhisa in Vail. Service was on point and food was spectacular. We did order omakase for the table... which was for a special occasion and definitely worth it, though not cheap. Nothing bad to say and would go back time and timeagain. The Vail Matsuhisa is by far the most beautiful of the 3 options in Colorado (Aspen, Denver and Vail). All three aregreat, but the other two don't have the view that Vail has. Read more

We came at opening with a group of 5. We got lucky and we were able to be seated :) I have to start off with saying that the... service from the wait staff and waitress were on point. Top notch service! The food was amazing as well. Very flavorful andeveryone loved their food. Yes it’s a little pricy but I guess that comes with great flavors. Read more

I feel that the quality of the food is not commensurate to its price. The sashimi was slimy and cost $15 for two pieces of very... thinly sliced tuna/salmon. The rolls were meh. If this restaurant were in California, I doubt it will get any patronage. Icouldn’t believe it was fully booked, definitely overrated. The black cod tasted good but I was underwhelmed by a plate withzero sides. Read more

Amazing experience at Matsuhisa. We thought it would be overpriced and overhyped, but that wasn’t the case. All of the food... was delicious; would definitely recommend the rock shrimp tempura, scallops, cod lettuce wraps and tropical shave ice. Wouldskip the sushi; it was something you could get anywhere, but the rest of the menu was special. The waitstaff made the experience- they are kind, experienced, and know every item on the menu in detail. Highly recommend! Read more

If a place is less than 4 stars, I'm more likely to not write a review than say something negative. By and large, I believe... people do work hard and try to make a positive experience. Maybe I came in on an off night or I was tired, jet-lagged, not inthe mood. I guess I'm sharing this only to temper the hype. There's nothing negative to say. You will get a good meal andwill most likely enjoy yourself. Good location. Hip vibe. And in all honesty, the food was solid. Unfortunately, it was notexceptional. And that's what we were expecting based on the price and reviews. I get that you pay a premium for whatever youget in Vail, but more often than not, we have felt there's been some sort of "added value" in the extra spend. Not so muchhere. I do want to recognize Barron, our server. He was excellent. He provided the type of service we were hoping for. Read more
