Update:June 2022: I'm so disappointed to say that when we went back for the first time in a few years, nothing was as good. Cold... sesame noodles were gummy and pretty bland even when they made a second bowl for us. Salt and pepper shrimp was bland this time.The cucumbers remain amazing. Original review: Excellent food, great service. Try the cucumbers; they are amazing. Salt andpepper shrimp, shrimp with pea pods, chef's special fish with sauce, cold sesame noodles--really anything. I live an hour away from the Lehigh Valley, and I refuse to visit the area on a Tuesday. Why? Because I wouldn?t be able to dine... at my absolute favorite Asian restaurant, Hunan Springs. The food is fresh and delicious, the portions are generous, and theservice is excellent! Take out is also fabulous, but I miss the complimentary crunchy noodles and cucumber salad that areincluded when we dine in. Particularly love the dumplings, egg rolls, and General Tsos, and we ESPECIALLY appreciate thatvegetarian options are not treated as an afterthought. The General Tso Tofu, Eggplant in Garlic Sauce, and vegetable dumplingsand rolls are all delicious! This is a don?t miss dining spot - but don?t forget, they?re closed on Tuesdays! Read more
