Hidden Gem! Backdrop is a scene to a secret garden. Service to the 9?s. Well worth our wait. Immediately felt like home when we... were escorted back to our table in the courtyard. We came just in time for the most perfect fall weather, but a cozy nook insideduring cold season would have hosted just the same. The menu was perfection and you can taste Chef Karl?s passion in his food.Rob was timely with all of our needs; we are so glad we avoided the tourist traps for our date night out in Gettysburg. I'm a local and have been going to George's at The Swope every Sunday for the past few months. The food is fabulous! My "go to"... items are the T-Bone Steak, Shrimp and Scallop Scampi with Squid Ink noodles, Chef Karl's famous crab cakes and the CapreseSalad. Everything is cooked to perfection and is fresh! The Caprese Salad is literally AMAZING. The tomatoes used are fresh anda lot of the herbs used in the dishes are grown in the Swope mini garden off the patio. So many wonderful entree's to choosefrom. You not only get a side salad accompanied by a homemade champagne vinaigrette, but two additional sides as well. There isplenty to choose from on the menu. We visited George?s at the Swope as part of the Savor Gettysburg Food Tour and were not disappointed. Chef Karl served us... caprese salad and his test creation of crab cake stuffed shrimp. Both were AMAZING!! The food quality, presentation, and tastewere all too notch! We look forward to a return trip where we can delve into the full menu and enjoy more of Chef Karl?screations. Gettysburg is blessed with many restaurants for the size of its population but not so blessed that many of them cater to... tourists. Tourists frequently are one-time customers so, what pleases a tourist might not please a local. We are locals. Wehave walked past a sandwich board sign for George's at the Swope and decided to take the plunge. The Swope is a B&B one blockfrom the town's epicenter and is in and of itself and lovely architectural jewel bristling with history, charm and elegance. Themanor along with a generously sized patio form the foot print of George's. My wife called to make a reservation at George's ona Wednesday night. Given the pandemic which has stifled small businesses and being a weekday night, diners are few and farbetween in Gettysburg. The chef had asked us to pick our appetizers and entrees beforehand and we selected Atlantic salmon,crab cakes, lamb chop and tuna. I am not a polished foodie so what you read is far from a restaurant review found in a culinarymagazine. Karl (how the restaurant got to be called George's with Karl as its guiding spirit is for you to discover) told us toBYOB which we did. We had a table set in a corner that let me peek into the library which will become as per Karl's projectionthe bar. Our table was impeccably arranged and comfortable. Two of us had the Caprese salad as a starter and one, my wife, hadBeet and Goat Cheese salad. Since we were with our close friends, they didn't mind that I picked up my spoon and sipped theremaining salad dressing from my caprese salad. Yes, it was that good. My wife ate her Beet and Goat Cheese Salad with a look ofserene contentment but refrained from spooning up the remaining dressing. For entrees we had the Bistro Crab Cakes, AtlanticSalmon, Ahi Tuna Steak and New Zealand Lamb Chops. All dishes were superb and nothing was left on the plates.
